How to make Grilled Cilantro Lime Chicken Breast with Mango Avocado Salsa – step by step
Cilantro Lime Grilled Chicken

Pat chicken dry and set aside

In the bowl of your food processor add the cilantro, garlic, lime juice, lime zest, olive oil, coriander and salt

Process on high until all of the cilantro and garlic has been fully processed and the marinade is smooth

Place the chicken in a gallon sized plastic bag or a sealable tupperware container and then pour the cilantro lime marinade over it

Marinate the chicken for at least 4 hours or overnight

Take the chicken out about 30 minutes before you are ready to grill it

Turn your grill on high

When the grill reaches 400°F put the chicken on, pour the excess marinade over the chicken

Close the grill and cook for about 6-8 minutes*

Flip the chicken and grill on the other side about 6-8 more minutes*

Check the internal temperature of the chicken with a thermometer, the chicken is cooked when it reads 165°F

When chicken is cooked, remove from the grill and put it on a clean plate

Let rest about 5 minutes

Serve over cilantro lime rice and top with mango avocado salsa
Mango Avocado Salsa

Add the mango, avocado, corn black beans and red onion to a medium sized bowl, mix with a spoon

Add the lime juice, olive oil and spices, toss to evenly coat

Serve on top of chicken

Why marinate chicken?
