- Season the chicken.

Can you make this recipe with chicken thighs?
I prefer to make this recipe with chicken breasts, but you can use thighs if that’s what you have. Cut the thighs into fairly small chunks so that they cook through in the oven.
If you have cooked shredded chicken to use up, you can also stir that in when you add the pasta if you’d like.
Can you make it with different cheese?
If you aren’t a huge fan of feta, this recipe also works really well with goats cheese. I haven’t tried it myself, but I’ve also seen great results with Boursin. If you try it be sure to let me know what you thought!

Baked Chicken Feta Pasta Recipe
Ingredients
- ½ Pound chicken breast diced
- 1 Tsp garlic powder
- 1 Tsp Italian seasoning
- ½ Tsp onion powder
- ¼ Cup olive oil
- 2 Cups cherry tomatoes
- 8 oz feta cheese
- 2 Cups pasta
- Pepper to taste
- Basil cherry tomatoes and shaved parmesan
Instructions
- Preheat the oven to 400 degrees.
- In a bowl season the chicken with the garlic powder, onion powder, Italian seasoning and pepper.
- Add the olive oil, cherry tomatoes and feta cheese and seasoned chicken to a baking dish and toss to evenly coat. Sprinkle with pepper and take to the oven.
- Bake for 30 minutes or until the top of the feta cheese is golden and the tomatoes are roasted.
- While the tomatoes and feta are baking, prepare the pasta according to package directions. Drain and reserve ½ Cup cooking pasta water.
- Remove the feta and tomatoes from the oven and stir to combine, breaking the tomatoes to create a creamy sauce.
- Add the pasta and the reserved cooking water and toss until everything is well coated.
- Serve with tomatoes, basil, shaved parmesan and a crack of black pepper.
