Chicken teriyaki stir fry is a great easy weeknight meal that’s ready to eat in less than 30 minutes. Chicken and veggies are cooked in a sweet honey & soy sauce based sauce for a flavorful dish.
Combine chicken broth, water, soy sauce, honey, cornstarch, and red pepper flakes.
Cook cubed chicken breast in a large skillet until cooked through and browned.
Cook broccoli, carrots, and red pepper until soft.
Add cooked chicken back to the veggies and add garlic and ginger. Stir and allow to heat through.
Add cashews and the sauce mixture. Allow to simmer.
Once heated through, serve over rice. Garnish with sesame seeds and green onion. Enjoy!
