This is such an easy recipe that goes well with loads of sides! For dinner you can go with rice, veggies, mash, fries, slaw – whatever takes your fancy. If you’re have this for lunch, slice up the cooked chicken and put it on a salad.
What’s the best cut of chicken to use?
I used chicken breast in this recipe but you could also go for chicken thighs or chicken tenders. Just be sure to adjust your cooking time for different cuts. Thighs usually take the longest (25 mins) and tenders can be quicker (15 mins).
To make sure your chicken is cooked thoroughly you can insert a meat thermometer into the thickest part, when it reads 165F its done!
How to get succulent chicken in the air fryer
The trick to keeping the chicken tender and juicy is to coat it well. I used buttermilk and then coated with flour and breadcrumbs. This way all the juices are nicely locked in. Give that chicken a good soak in buttermilk!

Recipe Tips and Notes
- Don’t overcrowd the air fryer, cook in batches if needed.
- Allow the chicken breasts to soak in buttermilk for at least 4 hours.
- Different air fryers may require different timings, check your air fryer manual.
- If you don’t have the same mustard to hand you can use whatever you have available, the flavor will change slightly but it will still have that lovely sweet/savory hit!

Way too much salt. Terrible. Forget the sauce people. No wonder people have to go to the doctor for blood pressure issues!
