Grilled Chicken Caesar Salad Wrap with Cucumber and Caesar Dressing

While I love a classic chicken Caesar salad, transforming it into a portable wrap can be tricky if you want to avoid a soggy mess. To solve that, I use mini flour tortillas to create perfectly portioned, snack-sized wraps that are much easier to handle than a giant burrito.

What makes my version stand out is the double-crunch factor: I use fresh cucumber matchsticks alongside crunchy croutons to ensure every bite has a crisp, refreshing texture that holds up even if you’re eating on the go. By quickly grilling the chicken and romaine in the same pan, I get a hit of smoky flavor in under 30 minutes. This is one of my favorite healthy lunches to make during busy work weeks!

If you’re packing these chicken cucumber wraps for a work lunch, the order in which you layer matters. Place your grilled chicken on the lettuce first, then the croutons, and then the cucumber matchsticks. The chicken and cucumber act as a moisture barrier, shielding the croutons from the dressing and the grilled lettuce. Chicken Caesar Wrap Recipe

These grilled chicken Caesar wraps are a fresh, portable twist on the classic salad. Packed with juicy grilled chicken, smoky charred romaine, and crisp cucumber matchsticks, they are the perfect 30-minute meal for a quick lunch or a light dinner.

Equipment

  • Grill or Indoor Grill Pan
Serves 4 people

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 boneless, skinless chicken breasts (*)
  • 2 romaine lettuce hearts (broken into leaves)
  • 1 cucumber (peeled)
  • 10 flour tortillas (4-5 inches, warmed **)
  • ⅓ cup Caesar salad dressing
  • ¼ cup croutons
  • ⅓ cup freshly shredded Parmesan cheese
  • salt and pepper (to taste)

Instructions

  • Brush the grates of a grill or an indoor grill pan with extra virgin olive oil and set over medium heat.

  • Add the chicken and grill for 10 minutes on each side until cooked through to 165°F.

  • Let chicken rest for 5 minutes, then slice into 10 thin strips. Set aside.
  • Add the romaine lettuce leaves in the same grill pan and grill for 2-3 minutes on each side until slightly charred. Then set aside

  • Thinly slice cucumber into matchsticks.

  • Open the mini tortillas, spread with Caesar salad dressing, add 2 charred lettuce leaves, a slice of the chicken, 2 croutons, 2-3 cucumber sticks, and sprinkle some parmesan, salt, and pepper.
    10 flour tortillas, ⅓ cup Caesar salad dressing, ¼ cup croutons, ⅓ cup freshly shredded Parmesan cheese, salt and pepper

  • Wrap like a burrito, then cut in half. You can use a toothpick to keep them wrapped while serving.

  • Dip it in some more caesar salad dressing, and enjoy!

Notes

*This recipe works best with boneless, skinless chicken breasts, but thighs or tenders work too. You can also add any leftover or cooked chicken to these wraps. 1 large breast works for 10 snack-sized wraps, but if you’re serving these as a full dinner, I recommend doubling the chicken to 2-3 breasts.
**I prefer to make this recipe with mini flour tortillas. However, you can use any size tortillas you like and simply divide the ingredients as needed.

Tips:
  • Instead of grilled chicken, you can pan sear chicken, use Crockpot chicken breasts, or any other cooking method you like.
  • For a low-carb recipe, use low-carb tortillas. Or use the lettuce leaves as your wrap!
  • I like to grill the romaine leaves too to give the wraps an extra crunch, but this is optional.
  • If you prefer smaller pieces, lightly crush the croutons.
  • I recommend warming the tortillas for a few minutes on the stovetop to make them more pliable and add some texture.
  • Optionally, grill the assembled wraps for 30-60 seconds for a crispy exterior.
  • These mini wraps are perfect for kids’ lunchboxes or as a light appetizer. If you’re serving these for a main dinner, I usually plan for 2-3 wraps per person!
Meal Prep: If packing for lunch, place the chicken and croutons in the center of the lettuce leaves to act as a barrier between the dressing and the tortilla
Storage: Store chicken Caesar salad wraps in an airtight container in the refrigerator for up to 3 days. Store chicken and other components separately for best results.

Best Chicken for Caesar Salad Wraps

I like to make grilled chicken breast for my homemade chicken Caesar wraps. But you can use up leftover shredded chicken or a rotisserie chicken if you have some in your fridge. For crispy chicken Caesar wraps, I recommend cooking up my favorite fried chicken tenders or some air fryer chicken tenders.

How to Make a Chicken Caesar Wrap with Grilled Chicken Breast Step by Step

Grill the Chicken: Brush the grates of a grill or an indoor grill pan with 3 tablespoons of extra virgin olive oil and set over medium heat. Place 1 boneless, skinless chicken breast on the grill and cook for 8-10 minutes on each side until cooked through to 165°F. Let the chicken rest for 5 minutes to redistribute the juices, then slice it into 10 thin strips, and set it aside.

Grill the Lettuce: Break down 2 romaine lettuce hearts into leaves. Then place them in the same grill pan and cook for 2-3 minutes on each side, until slightly charred. Pat the lettuce dry and set aside with the chicken.

Slice the Cucumber: Next, slice 1 cucumber into thin matchsticks. Watch the video in the recipe card if you need help slicing them this way.

Prep the Tortillas: This recipe makes enough for 10 mini tortillas/wraps, but you can just as easily split the ingredients between 5 larger tortillas. For best results, I recommend warming the tortillas in the microwave or a skillet first. Then, working with 1 wrap at a time, spread on a small amount of cold Caesar salad dressing. The cold dressing is usually thicker and less likely to make the wraps soggy. Plus, it provides a nice contrast to the warm chicken.

Add Lettuce: Next, add about 2 charred lettuce leaves per wrap.

Fill Wraps: Next, add 1 slice of grilled chicken breast per wrap, 2 croutons and 2-3 cucumber sticks.

Season: Sprinkle each wrap with some Parmesan, salt, and pepper to taste.

Fold the Wraps: Roll up each tortilla like a burrito or pinwheel, and cut in half. You can use toothpicks to secure each wrap if needed.

Serve: Serve grilled chicken caesar wraps fresh. Don’t be shy–dip them in some more Caesar salad dressing and enjoy!

How to Store

Chicken Caesar wraps are best served fresh, but can be stored in an airtight container in the refrigerator for up to 3 days. Enjoy cold.

If you’re meal prepping and worried about the tortillas getting soggy, cook and store the grilled chicken in an airtight container for up to 3 days, then store the rest of the Caesar wrap components separately and assemble fresh. They come together super fast!
