How to Make Honey Mustard Chicken Salad

Wash chicken breasts

In a non-stick pan melt the coconut oil on medium heat

Add chicken breasts and cook for 8 minutes on each side

Remove from pan and set aside

In a large salad bowl add chopped lettuce, sliced radish, cucumber, avocado and chickpeas

Slice the chicken breast into thin slices and add it in the salad

In a large jar, add the honey, mustard, olive oil, mayonnaise, salt, smoked paprika, white vinegar and juice of lime. Shake well until dressing in well combined

Drizzle over salad and chicken

Honey and Mustard Chicken Salad is perfect for meal prep
If you are like me, and love salad for lunches, then this is a great option that you can make ahead of time. You can cook the chicken breasts and store them in the fridge for 2 to 3 days in an airtight container until you are ready to use them. You can then make the salads up in separate containers and add the cooked breast.
The dressing will keep in the fridge for 3 to 4 days and you can add it to the salad when needed.
What is honey mustard dressing made of?
The dressing is a perfect way to add a zing of flavor to a chicken salad, and I’ve perfected this recipe for quite a while! To make the honey mustard dressing, you will need:
- honey
- yellow mustard
- extra virgin olive oil
- mayonnaise
- salt and smoke paprika
- vinegar
- lime juice
What’s the best way to cook the chicken breasts?
I personally prefer to cook the chicken in a skillet so that they are nicely seared and have color to them. For a more ‘hands off’ way of cooking, you can cook them in a pre heated oven for around 25-30 minutes at 350ºf.

- Use organic / free run chicken if possible.
- Check the chicken is fully cooked through.
- Use a mason jar to shake the dressing together or whisk together in a bowl.
