Crispy Chili Lime Chicken Thighs

I love any meal that involves my air fryer because it’s so quick and easy, and I especially love making air-fried chicken thighs. Thanks to my favorite kitchen appliance, my chili lime chicken thighs are truly effortless–just toss and cook! I season the tender thighs with a flavorful mix of lime juice, olive oil, chili powder, garlic powder, and paprika (definitely inspired by Tajin, which you can use if you have it). The chicken cooks up nice and juicy with the best crispy skin in under 20 minutes.

How to Marinate Without the Mush

While acid (lime juice) is a miracle worker for tenderizing meat, it is the enemy of crispy skin. For the ultimate texture, I recommend pulling the skin back slightly and rubbing the marinade directly onto the meat, then patting the skin dry and brushing it with only oil and salt. If marinating, submerge the thighs up to the skin, leaving the skin exposed so it can air dry in the fridge. This ensures the meat is zesty and tender, while the skin stays structurally sound enough to shatter when you bite into it.

Ingredients

  • 1 pound bone-in, skin-on chicken thighs (thawed if frozen*)
  • ¼ cup lime juice (from 2 limes**)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder (or 2 cloves minced fresh garlic)
  • ½ teaspoon ground paprika

Instructions

  • In a medium mixing bowl, combine the lime juice, olive oil, chili powder, garlic powder, and paprika; whisk together.

  • Add the chicken and toss to coat the chicken evenly.

  • Cook for 14 minutes at 375℉, or until the chicken registers 165℉ on an instant read thermometer.

Notes

*You can use chicken legs (20-25 min), chicken strips (8-10 min), chicken wings (18-22 min), or chicken breasts (10-15 min) instead.
**For a more aromatic flavor rather than just sour acidity, add the zest of the 2 limes to the marinade.
Tips:
  • Before tossing the chicken in the marinade, pat the chicken skin bone-dry with paper towels. This will help the marinade stick and penetrate better.
  • For even more browning, add 1 tsp of honey or agave to the marinade.
  • Optionally add 1 tsp of soy sauce or fish sauce to the marinade for extra umami.
  • If you cannot fit all of the thighs in your air fryer basket with space between them, cook in batches to ensure proper airflow.
  • To help the chicken crisp, always turn, rotate or shake the air fryer basket about halfway through.
  • Internal temperature is more important than the timer. Check at the 12-minute mark to avoid overcooking.
  • Let the chicken rest for 5 minutes before slicing to seal in the juices.
  • Garnish with fresh cilantro after cooking to prevent wilting.
  • Serve with rice and beans, or slice and top a fresh salad with the chicken.
Grilling Instructions: Season and marinate the chicken thighs as directed, then place on a grill set over medium-high heat (375-450°F) and cook for 6-10 minutes per side.
Make-Ahead: Instead of waiting until dinner time, marinate the chicken during the day for a fuller flavor. You can marinate for up to 12 hours.
Storage: Store chicken thighs in an airtight container in the refrigerator for 3 days, or freeze for 3 months.

Chili Lime Chicken Marinade

While this chili lime chicken is great tossed right in the air fryer, you can improve the flavor by marinating it. The mix of lime juice, oil, chili powder, garlic powder, and paprika is so spicy and fresh. Whenever I have the time (or foresight), I like to soak my thighs in the chili lime chicken marinade for as long as possible. Ideally, 4-8 hours will provide a great flavor. However, you can marinate them for as little as 30 minutes or as long as 12 hours. This allows for so much flexibility!

In a pinch, you can substitute the lime juice and all of the spices for store-bought Tajín; however, I have found that the additions of garlic powder and paprika help enhance the savory flavor of the chicken.

How to Make Chili Lime Chicken in the Air Fryer Step by Step

Prep: Gather up all of the ingredients needed to make this chili lime chicken recipe. In a medium mixing bowl, whisk ¼ cup of lime juice, 2 tablespoons of olive oil, 2 teaspoons of chili powder, 1 teaspoon of garlic powder, and ½ teaspoon of ground paprika together until well combined.

Season the Chicken: Pat 1 pound of bone-in, skin-on chicken thighs dry, add them to the marinade, and toss to coat evenly. Optionally, place the bowl into the fridge to marinate for 30 minutes or up to 12 hours, leaving the skin exposed so it doesn’t turn rubbery.

Prep the Air Fryer: Lightly spray your air fryer basket with olive oil spray, then add the chicken thighs, skin side up. Make sure there is space between the thighs for proper air circulation. If they’re too close together, consider cooking in batches for better crisping.

Air Fry the Chicken: Cook your chicken thighs for 14 minutes at 375℉, or until the chicken registers 165℉ on an instant-read thermometer. Let rest for 5 minutes before serving to allow the juices to redistribute.

How to Store, Freeze, and Reheat

Store leftover air fryer chili lime chicken thighs in an airtight container in the refrigerator for 3 days, or in the freezer for 3 months. Let thaw overnight in the refrigerator before reheating in a 350°F Air Fryer for 4-6 minutes, flipping halfway through.
