Rolled Chicken Breast Recipe
Made with just 6 simple ingredients, my Boursin cheese stuffed baked chicken roll ups are simple to make and full of flavor. I stuff my chicken breasts with classic garlic & fine herbs flavored Boursin and creamy mozzarella cheese. Truthfully, I think these rolled chicken breasts would be delish stuffed with any flavor of Boursin, or even some cream cheese mixed with herbs and spices.
Rolling up chicken breasts is easier than I thought, and it makes such a beautiful presentation with so little effort. Plus, the savory seasoning creates a beautiful crust on the outside that’s mouthwateringly delicious! This is an impressive gluten-free meal to serve to guests, but also simple enough to make on a Tuesday night.

Start with Thin Chicken for Easy Rolling
I like to buy thinly sliced chicken breasts when they’re available. When I can’t find them, I press regular chicken breasts between two pieces of plastic wrap and pound them to even thickness.

- Properly cooked chicken should read 165°F on an instant-read thermometer. Make sure to check the temperature of the meat, and not the filling.
- Rest for 5 minutes after baking so the cheese sets and doesn’t ooze out when cut.
- Serve with roasted veggies or a salad for a low-carb meal.

How to Make Chicken Roll Ups Step by Step
Prep: Gather up all of the ingredients to begin this recipe. Preheat your oven to 375°F, line a baking sheet with aluminum foil or parchment paper, and set aside. If you were unable to find thinly-sliced chicken breasts, thinly slice and pound regular chicken breasts into chicken cutlets.

Prep the Spices: Mix 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, 1 teaspoon of Italian seasoning, 1 teaspoon of kosher salt, and 1 teaspoon of ground black pepper in a small mixing bowl.

Season the Chicken: Lay out 1 pound of thinly sliced chicken breasts on your prepared baking sheet. Sprinkle the chicken with the seasoning mixture. Flip the chicken over.

Roll the Chicken: Spread 5.3 ounces (1 package) of Boursin cheese over each of the chicken pieces in an even layer. Sprinkle ½ cup of shredded mozzarella cheese evenly over the top. Roll the chicken up and make sure the seam side is down. If you’re having trouble getting the rolls to hold together, you can insert toothpicks through them to hold them together as they cook. Just don’t forget to remove them before serving!

Bake the Chicken: Bake your chicken rolls in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F. I like to let the chicken rest for about 5 minutes before serving to give the cheese a chance to set.

How to Store, Freeze, and Reheat
Store leftover chicken roll ups in an airtight container in the refrigerator for up to 3 days or in the freezer (tightly wrapped in plastic) for up to 3 months. Let thaw overnight in the refrigerator before reheating covered in a 350°F oven for 15-20 minutes, or until warmed through. Don’t forget to remove the plastic before reheating.
