Chicken roll ups are the ultimate easy dinner! Juicy, thin-sliced chicken is filled with creamy Boursin and melty mozzarella, then rolled and baked until golden. It’s simple, cheesy, and so satisfying—perfect for a weeknight or meal prep favorite.
Lay out the chicken on the baking sheet. Sprinkle the chicken with the seasoning mixture. Flip the chicken over.
1 pound boneless, skinless chicken breasts
Spread the Boursin cheese over the chicken in an even layer. Sprinkle the mozzarella cheese over the top.
5.3 ounces garlic & fine herbs Boursin cheese, ½ cup shredded mozzarella cheese
Roll the chicken up and make sure the seam side is down.
Bake for 35-40 minutes until the chicken reaches an internal temperature of 165°F.
Notes
*You can use regular chicken breasts, but make sure to pound them to an even thickness (about ¼ inch). This ensures even cooking and easier rolling.**If you can't find Boursin, you can flavor cream cheese with herbs and garlic or more Italian seasoning for a similar flavor and texture.Tips:
If you're having trouble getting the rolls to hold together, you can insert toothpicks through them to hold them together as they cook. Just don't forget to remove them before serving!
