Brown the Sausage: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once heated, add 6 Italian chicken sausages to the pan, and cook for 3-4 minutes; until browned on the edges. Then transfer to a plate. Browning the sausages before adding them to the Crockpot creates a much better texture that holds up well during the long cook time.

Add Ingredients to the Crockpot: Add 24 ounces (1 jar) of marinara sauce, 3 sliced bell peppers, 1 sliced yellow onion, 3 minced cloves of garlic, and ½ tablespoon of Italian seasoning to the slow cooker. Stir to combine everything, then place the browned sausages on top.

Cook: Cover the Crockpot and cook on HIGH for 2-4 hours; or on LOW for 4-6 hours. Once cooked through, remove the sausages and slice them into coins. Then return them to the Crockpot and stir in with the peppers and onions.

Serve: I love to serve chicken sausage and peppers with rice to fill out the meal. Any cooked or leftover rice can be used. Use instant rice, or make it in a rice cooker while the Crockpot is going. Top each serving with chopped parsley and grated parmesan, if desired.

How to Store, Freeze, and Reheat
Store leftover chicken sausage, peppers, and onions with sauce, all together in an airtight container. Keep in the refrigerator for up to 3 days, or in the freezer for up to 3 months. Reheat in a pot on the stovetop over medium heat, stirring regularly until warmed through.
