Grilled Chicken with Pineapple Salsa

    This grilled chicken with pineapple salsa is a quick and easy weeknight meal and packed full of fresh and vibrant flavors. This makes for a wonderful summer dish, but can easily be enjoyed all year round. Made with marinated chicken breast and perfect for a healthy dinner.

    Pineapple and chicken is such a great flavor combination, fresh and zesty with a tropical twist to it. This dish is so easy to make an the chicken is perfectly tender.

    How to Make Grilled Chicken with Pineapple Salsa

    • In a Ziploc bag add chicken breasts, olive oil, salt and pink peppercorns
    • Marinade for 1-2 hours
    • Heat a non stick grill pan on medium heat
    • Add chicken and grill for 6-7 minutes on each side until thoroughly cooked
    • Meanwhile prepare the pineapple salsa
    • In a small bowl, add the diced pineapple, tomato, onion, lime juice, vinegar and oregano
    • Let the chicken rest for 5 minutes before slicing
    • While chicken is resting, grill 3-4 pineapple slices
    • Serve pineapple salsa on top with grilled pineapple and rice on the side

    Grilled marinated chicken that’s succulent and juicy

    Marinating chicken is an easy way to get flavor into your meat, but it also helps it to be deliciously tender and and not dry out during cooking. Marinading helps to add moisture into the chicken breast so that they remain juicy after grilling. The marinade for this recipe is simple, requiring oil, salt and pepper, but the difference is remarkable!

    This pineapple salsa isn’t just for grilled chicken

    The pineapple salsa served up with the grilled chicken is so fresh and vibrant and it adds a wonderful color to the dish too. It’s quick and easy to prep with a handful of ingredients. I made a double batch of it to serve with tacos the next evening and it would work really well with fish and pork too.

    Grilled chicken is perfect for an easy weeknight meal

    Grilling is a perfect way to cook chicken on a weeknight because it’s so easy and quick. It only takes about 15 minutes to grill the breasts so dinner is on the table in a flash. I also love the color it gives to the chicken, it’s so much more appetizing than simply oven baking it!

    When is the grilled chicken done?

    The chicken is cooked when it has browned on both sides. If you have an instant read thermometer it should read 165F at the thickest part of the breast. You can also pierce the breast with a fork and all juices should run clear.

    Top Tips to Make Grilled Chicken with Pineapple Salsa

    • Marinate the chicken for at least one hour before cooking.
    • For the juiciest chicken, let it come to room temperature before grilling it.
    • Let the chicken rest or 5 minutes before slicing and serving.
    • You can use fresh or canned pineapple for the salsa.
