How to Make Grilled Chicken with Pineapple Salsa
- In a Ziploc bag add chicken breasts, olive oil, salt and pink peppercorns
- Marinade for 1-2 hours
- Heat a non stick grill pan on medium heat
- Add chicken and grill for 6-7 minutes on each side until thoroughly cooked
- Meanwhile prepare the pineapple salsa
- In a small bowl, add the diced pineapple, tomato, onion, lime juice, vinegar and oregano
- Let the chicken rest for 5 minutes before slicing
- While chicken is resting, grill 3-4 pineapple slices
- Serve pineapple salsa on top with grilled pineapple and rice on the side
