This creamy chicken salad combines leftover chicken and pistachios with a bright, tangy, homemade green goddess dressing filled with fresh herbs. Perfect for quick salads, sandwiches, and wraps!
Combine the chopped herbs, then reserve 2 tablespoons for later.
½ cup fresh parsley, ¼ cup fresh chives, ¼ cup fresh basil, ¼ cup fresh dill
Add the remaining herb mix, mayonnaise, Greek yogurt, lemon juice, garlic, salt and pepper to a blender or food processor.
½ cup mayonnaise, ½ cup plain greek yogurt, 1 lemon, 1 clove garlic, ½ teaspoon kosher salt, ¼ teaspoon ground black pepper
Blend until smooth.
Add the chicken, pistachios (if using), and red onion to a large bowl. Pour in the dressing and add in the reserved chopped herbs.
4 cups chopped cooked chicken breast, ¼ cup red onion, ½ cup pistachios
Stir everything together until the chicken is fully coated in the dressing.
Serve as is or in a sandwich or lettuce wraps.

*Use any cooked or leftover chicken. Shredded chicken, chopped chicken breast or thighs, and rotisserie chicken all work well.**Pistachios add nutty flavor and texture to this salad, but it is optional.
