1poundboneless skinless chicken breastsliced into small strips
1red bell peppersliced into strips
Sliced green onion
Whisk together the soy sauce, oyster sauce, and sesame oil in a small dish. Set aside.
Cook the noodles according to package directions.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add in the chicken and season with salt and pepper. Cook for 5-7 minutes until browned on all sides and cooked through. Transfer the chicken to a clean plate.
Add in another tablespoon of olive oil and cook the onion for a couple minutes until soft. Stir in the snow peas, carrots, bell pepper, and mushrooms. Sauté for 3-4 minutes until they begin to soften. Add in the garlic and cook for another minute.
Add in the noodles, chicken, and sauce. Give the mixture a good stir and cook for a minute or two until the sauce thickens.
