This creamy Boursin chicken is a simple, weeknight-friendly dinner that feels special. Juicy chicken breasts pan-seared and coated in a tangy, herby Boursin cheese sauce, ready in under 30 minutes!
In a large skillet, heat the olive oil and butter over medium-high heat. Sear the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Pour the chicken broth into the skillet, lower the temperature to medium-low, and add the Boursin cheese. Stir until the sauce is smooth, and let it reduce for 5 minutes.

Add the chicken back to the skillet, along with the optional spinach. Let it warm through. Serve with fresh parsley and enjoy.

Their higher fat content makes them juicier, but they may take a few extra minutes to cook through.**There are tons of flavors of Boursin cheese you could use to make this chicken recipe. I like the original garlic and fine herbs flavor, but the shallot and chive, basil and chive, or caramelized onion and herbs flavors also work well. If you don't have access to Boursin, try mixing cream cheese and fresh herbs.Tips:

I recommend removing the skillet from heat when adding the Boursin, and whisking well to prevent curdling or separating.
