This honey mustard chicken salad recipe is hearty enough for a main meal. Packed full of flavor, texture and healthy ingredients. The honey and mustard dressing is rich and creamy and the whole dish takes less than 30 minutes to make.
In a non-stick pan melt the coconut oil on medium heat
Add chicken breasts and cook for 8 minutes on each side
Remove from pan and set aside
In a large salad bowl add chopped lettuce, sliced radish, cucumber, avocado and chickpeas
Slice the chicken breast into thin slices and add it in the salad
In a large jar, add the honey, mustard, olive oil, mayonnaise, salt, smoked paprika, white vinegar and juice of lime. Shake well until dressing in well combined
Drizzle over salad and chicken
Sprinkle with black and white sesame seeds. Enjoy!
