Liven up your weekend brunch with this delicious croissant French toast bake. Loaded with fresh berries and topped with a creamy yogurt, this 30 minute recipe is ideal for serving to a crowd.
Preheat the oven to 375 F / 190 C and grease a 9 x 5 inch baking dish with butter.
In a small non-stick pan, cook mixed berries with agave syrup for about 2 minutes.
In a large mixing bowl, whisk eggs, milk, vanilla essence and salt. Toss croissants pieces in egg mixture and place in the baking dish. Top with berries and mozzarella cubes. Place on a baking tray and bake in the middle of the oven for 20 minutes. Until golden and crisp.
Serve warm with yoghurt and agave syrup.

The French Toast can be prepared a night in advance. After you toss croissants in egg mixture, top with berries and mozzarella. Cover with aluminum foil and store in the refrigerator until next morning when ready to bake.
You can use fresh berries or any fruits you wish.
I used almond milk in this French toast bake, but you can use dairy milk or other plant based milk like soy, oat or coconut.
This makes for a delicious brunch, but you could also serve it as a dessert with scoops of ice cream.
Bake in a pre heated oven so that it cooks evenly through.
