Ingredients
4
boneless skinless chicken breasts
Salt and pepper to taste

tablespoons
Sabra Hummus
1
teaspoon
paprika

ounce
can diced tomatoes
drained and rinsed
6.5
ounces
artichoke hearts
drained and rinsed
1
small yellow onion
cut into wedges
2
lemons
sliced
1
cup
Kalamata olives
1
cup
crumbled feta cheese
Instructions
Preheat oven to 350F.
Spray a 9x13 baking dish with nonstick spray.
Pat the chicken dry on both sides and season with salt and pepper to taste.
Add chicken to baking dish.
Spread approximately 1 tablespoon hummus over each chicken breast, completely coating the top of each breast.
Sprinkle with paprika.
Add tomatoes and artichoke hearts around the chicken.
Lay the lemon slices around the chicken.
Sprinkle with olives.
Bake for 30-40 minutes or until chicken reaches an internal temperature of 165F.
Remove from the oven and sprinkle with feta. Enjoy!
