For French Toast:
In a small bowl, use a fork to combine cream cheese and 1 tbsp of the icing sugar for filling. Set aside
In a large bowl add the eggs, heavy cream, cinnamon, salt, all purpose flour and granulated sugar. Mix the batter with a hand blender or a whisk until well combined
Take two slices of bread and cut the crust
Fill a small bowl with little water (1 inch)
Take each slice of bread and dip the very edge of each side in the water. Just one or two millimeters. Make sure you don’t make them too soggy
Set the slices down
Add one tbsp of the cream cheese filling in the center of one of the toast slices
Add the second toast slice on top of it and seal the edges of the toast by pressing gently but firmly with your hands on the wet edges
Dip the french toast in the batter for 2-3 second on each side
Melt butter into a non-stick pan on medium heat
Add french toast and cook for 2 ½ minutes on each side
Repeat process for each french toast. You may add extra butter between each toast if needed
Serve with blueberry sauce on top and some extra icing sugar!
