Chopped Chicken Salad
This chopped chicken salad recipe is hearty enough for a main meal and also great for meal prep lunches for the week. Lightly spiced chicken breast is paired with fresh and crunchy vegetables and finished with a sweet and spicy dressing.

Ingredients
2
chicken breasts

tbsp
extra virgin olive oil

tsp
paprika
1
tsp
garlic powder
1
tsp
ground cumin

tsp
salt

black pepper

white cabbage
1 ½
cups
purple cabbage
7
ounces
canned corn
¼
cup
red onion
diced

tbsp
fresh cilantro
optional
Sweet & Spicy Sauce Ingredients:
1
tbsp
extra virgin olive oil
3
tbsp
honey
1
tbsp
hot sauce
franks hot sauce or tabasco
Juice of ½ lemon
Instructions
Wash chicken breast, pat dry with kitchen paper, then cut into cube shaped bites
Add chicken in a bowl with olive oil, garlic powder, paprika, ground cumin, salt and black pepper
Add chicken cubes in a non-stick pan on medium heat
Cook chicken 6-7 minutes on each side until thoroughly cooked and golden brown
When cooked, remove from heat and set aside
Wash and chop white and purple cabbages
Dice the onion
In a large salad bowl add the white cabbage, purple cabbage, onion, corn, and chicken cubes
Sweet & spicy sauce instructions:
In a jar add extra virgin olive oil, honey, juice of half a lemon and hot sauce
Shake well until combined
Drizzle over salad, sprinkle some fresh cilantro and enjoy!
