Grilled Chicken with Pineapple Salsa
This grilled chicken with pineapple salsa is a quick and easy weeknight meal and packed full of fresh and vibrant flavors. This makes for a wonderful summer dish, but can easily be enjoyed all year round.

Ingredients
2
chicken breasts
3
tbsp
extra virgin olive oil
1
tsp
salt
1
tbsp
pink peppercorns
3-4
pineapple slices
Pineapple salsa
2-3
pineapple slices
diced
½
tomato
diced
½
onion
diced
Juice of 1 lime
1
tsp
while vinegar
1
tsp
fresh oregano leaves
Instructions
In a Ziploc bag add chicken breasts, olive oil, salt and pink peppercorns
Marinade for 1-2 hours
Heat a non stick grill pan on medium heat
Add chicken and grill for 6-7 minutes on each side until thoroughly cooked
Meanwhile prepare the pineapple salsa
In a small bowl, add the diced pineapple, tomato, onion, lime juice, vinegar and oregano
Let the chicken rest for 5 minutes before slicing
While chicken is resting, grill 3-4 pineapple slices
Serve pineapple salsa on top with grilled pineapple and rice on the side
