This Instant Pot Jerk Chicken recipe is about to become your favorite mid week meal! So simple and easy to make and packed full of flavor, this marinated chicken needs very little hands on time.
Place all the ingredients except the chicken in a food processor. Pulse until the mixture is mostly smooth.
2 green onions, ½ onion, 2 Scotch bonnet or habanero peppers*, 1 small knob fresh ginger, 3 garlic cloves, 1 teaspoon dried thyme, ½ tablespoon ground allspice, 2 tablespoons soy sauce, 2 tablespoons brown sugar, ½ teaspoon salt, ½ teaspoon ground pepper, 1 tablespoon apple cider vinegar, Juice of 1 lime
Place the chicken thighs in a large bowl and pour in the marinade. Toss chicken in the marinade until well-coated. Cover the bowl and place in the refrigerator to marinate at least 1 hour or up to 8 hours.

Place the chicken and marinade in the Instant Pot. Press the Manual Button and set the timer for 30 minutes on high pressure. Naturally release or manually release the pressure once cooking is complete. Remove the chicken to shred and then return to the pot to soak in the juices until ready to serve.
