Who says you can’t eat like a king right in your own home? Consisting of shredded chicken in a rich cream sauce with mushrooms and vegetables, this easy Chicken a la King recipe is one the whole family will love!
Melt the butter over medium heat in a large skillet. Add in the shallot and mushrooms, and cook until translucent, about 5-7 minutes. Add in the garlic, salt, pepper, and sauté for 30 seconds until fragrant.
½ cup butter, 1 shallot, 8 ounces cremini or white button mushrooms, 1 clove garlic, ½ teaspoon salt, ½ teaspoon black pepper
Sprinkle in the flour and stir until all the flour is coated with the butter.

Whisk in the chicken broth and half and half. Bring the mixture to a simmer, then lower the heat and let it cook for 5 minutes until thickened.

Stir in the frozen peas, pimentos, and chicken. Simmer until warmed through, about 5 minutes.
1 cup frozen peas, ⅓ cup pimentos, 3 cups cooked chicken
Serve over pasta or rice, if desired.

In place of the shallot, you can also use half of a yellow onion.
For the chicken, you can grill or bake chicken breasts, or use a rotisserie chicken from the store!
If you have a hard time finding pimentos, you can also use roasted red peppers. The flavors will change slightly, but will still be delicious!
Storage: Store chicken a la king in an airtight container in the refrigerator for 3 days, or freeze for 3 months.
