Chicken Foldover Quesadillas (Tik Tok Viral Recipe)
If you've seen the Tik Tok trend of folded tortillas, you will love these chicken foldover quesadillas! Made with corn, avocado, pulled chicken, cheese, beans, and a homemade spicy tomato sauce.
To make the sauce, mix the spices with the tomato puree, and add salt to taste.
½ cup tomato puree, 1 teaspoon paprika powder, 1 teaspoon garlic powder, ½ teaspoon ground cumin, ½ teaspoons dried oregano, ½ teaspoon cayenne pepper, ¼ teaspoon ground coriander
Place one tortilla on a board and cut it to the middle (note 3).

Place the filling for the wrap in each quarter of the tortilla: lettuce and avocado on one; chicken on the next; beans and corn on the third; and sauce and cheese on the last. I also like to sprinkle some cheese on the chicken and the beans (note 4).
1½ cups grated mozzarella cheese, 1 cup pulled chicken, ½ cup kidney beans, ½ cup corn, 1 avocado, 4-8 lettuce leaves
Fold the piece left from the cut over, then to the right and then downwards
Heat up a pan over medium heat (no oil) and cook the wrap 2-3 minutes per side. Turning them over the open side to the top. Press down with a lid for a more even browning (note 5).
Serve hot with sour cream, salsa or guacamole.

Feel free to use store bought salsa in place of the homemade sauce if you're short on time.
Note 1: use whatever cheese you like best and melts well. You can also mix different cheeses. Use more if you like - everything is better with cheese
Note 2: If your chicken is not seasoned, either make more of the spice mix or use taco seasoning to season the chicken before using. You could also double the amount of sauce and put some extra.
Note 3: Fold the wrap in half and in half again, open and you will see little marks that you can use for help to know where to put the ingredients
Note 4: Place the sauce left of the cut, so it will be in the middle later and doesn't get too warm/mushy. Place cheese just right from the cut so it will be on the outside later and melt perfectly.
Note 5: If you used oil it would be harder to handle the tortilla and it might brown too fast on the outside before the cheese had a chance to melt. A dry pan works best.
Storage: Chicken folder quesadillas are best served right after making, but you can store extras in an airtight container, or wrapped tightly in aluminum foil, in the refrigerator for 1 day. After that, it will become soggy and some of the ingredients won't be very fresh.
