Liven up your dinners with this delicious baked chipotle chicken recipe. Marinated chicken breasts are oven baked for a simple and easy recipe that's quick to prep.
Pulse all ingredients (except the chicken breasts) in a food processor until smooth.
2 chipotle peppers, ¼ cup adobo sauce, ¼ cup chicken broth, 1 tablespoon maple syrup, 2 tablespoons olive oil, 1 tablespoon chili powder, 3 cloves garlic, 1 teaspoon cumin, ½ teaspoon oregano, ½ teaspoon salt
Reserve ⅓ cup marinade for later.
Pour the remaining marinade in a resealable plastic bag, and add in the chicken breasts.

Let the chicken marinate for at least 1 hour, or up to overnight (in the refrigerator).
When ready to cook, preheat the oven to 400℉.
Place the chicken breasts and all the marinade from the bag in a baking dish.
Bake for 25-35 minutes until the chicken is cooked through.
Pour reserved marinade over chicken to serve.
Notes
Marinate the chicken in the chipotle sauce for at least an hour. You can leave it as long as 12 hours in the fridge.
Storage: Store baked chipotle chicken in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
