Ingredients

cup
soy sauce

honey

rice vinegar

tomato paste

Siracha sauce

chicken breasts

medium carrots
sliced

red bell peppers
cut into bite sized pieces

green bell peppers
cut into bite sized pieces

large white onion
cut into bite sized pieces

canned pineapple chunks, with liquid.
Optional:
Rice
Sesame seeds
Green onions
Instructions
In a medium bowl, whisk together soy sauce, honey, rice vinegar, tomato paste, garlic, and ginger paste. Set aside.
Place chicken, carrots, bell peppers, and onion into the slow cooker.
Pour sauce mixture over chicken and vegetables.
Place the lid and set slow cooker on Low for 3 hours.
Once chicken has reached an internal temperature of 165F, remove from slow cooker onto a plate to shred. Set aside.
Add pineapple and juice to the crockpot.
Add shredded chicken back into the slow cooker then stir to combine.
Serve over white rice and top with sesame seeds and sliced green onions.
Notes
Use an instant read thermometer to check that your chicken is fully cooked. It should register at 165F.
If you like things spicy, you can add in a couple of fresh red chili peppers, or more sriracha sauce.
