Hummus Crusted Greek Chicken Bake
A delicious and easy one pan meal with a Mediterranean twist

Ingredients
4
boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
to taste

tablespoons
plain hummus
we used Sabra

teaspoon
ground paprika

canned diced tomatoes
drained and rinsed (1 can)

ounces
artichoke hearts
drained and rinsed (1 jar)

yellow onion
cut into wedges

lemons
sliced

cup
Kalamata olives

cup
crumbled feta cheese
Instructions
Preheat oven to 350°F. Spray a 9x13-inch baking dish with nonstick spray.
Pat the chicken dry on both sides and season with salt and pepper to taste, then add it to the baking dish.
4 boneless, skinless chicken breasts,
Kosher salt and freshly ground black pepper
Spread approximately 1 tablespoon of hummus over each chicken breast, completely coating the top of each breast, then sprinkle evenly with paprika.
4 tablespoons plain hummus,
1 teaspoon ground paprika
Add the tomatoes, artichoke hearts, and onion wedges around the chicken. Lay the lemon slices on top, then sprinkle with olives.
14.5 ounces canned diced tomatoes,
6.5 ounces artichoke hearts,
1 yellow onion,
2 lemons,
1 cup Kalamata olives
Bake for 30-40 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove from the oven and sprinkle with feta. Enjoy!
