  • 6 chicken thighs cut into 1/2 inch strips
  • 2 teaspoons kosher salt
  • 2 cups buttermilk
  • Other required item: 8 wooden or metal skewers


  • Place chicken thighs, kosher salt, and buttermilk in a resealable bag. Massage to evenly coat chicken and refrigerate at least 6 hours or up to overnight.
  • If using wooden skewers, soak in a pan of water for 30 minutes prior to grilling.
  • Rub the grill grate with vegetable oil and preheat to medium-high.
  • Thread about 3 pieces of chicken securely onto each skewer.
  • Grill for 5-7 minutes on each side, or until chicken is cooked through.
