What’s in chicken wild rice casserole?
I’ve created this no fuss casserole recipe to be super easy. Just toss together these budget friendly ingredients!
- Half and Half: This makes everything nice and creamy.
- Mushrooms: Baby bella or cremini mushrooms are the best. As long as they’re cut into uniform sized pieces, though, you can really use any mushrooms you like best.
- Wild Rice: Make sure it’s cooked BEFORE you add it to the dish.
What’s the best chicken to use?
When you add the chicken to the mixture, it needs to be cooked. You can either buy pre-cooked chicken or bake your own in the oven at 375°F for 15-20 minutes. I used chicken breasts, but you can use also thighs.

How to Store and Reheat
You can store leftover chicken and rice casserole in an airtight container in the fridge for up to 3 days. Reheat individual portions in the microwave or pop the whole dish right back in the oven to warm through.
How to Freeze
Let the chicken wild rice casserole fully cool to room temperature prior to freezing in an airtight container for up to 3 months. Let it defrost in the fridge prior to reheating.

- I always cook the rice and chicken before adding them to the rest of the ingredients.
- Be sure to grease your baking dish before adding the ingredients. I use a 2.5 quart oven safe baking dish.

- 1 teaspoon garlic minced
- 1 small yellow onion diced
- 2 cups mushrooms sliced
- â…“ cup flour
- 2 teaspoons chicken bouillon powder
- 14.5 ounces low sodium chicken broth 1 can
- 1 cup half-and-half
- 4 cups cooked chicken cut into 1 inch cubes
- 4 cups cooked wild rice
- 1 cup shredded mozzarella cheese
- â…“ cup slivered almonds
- 1 bag croutons crushed
- 2 tablespoons butter melted
Instructions
- Preheat oven to 350℉.
- In a large saucepan, heat butter over medium-high heat. Add the garlic, onion, and mushrooms. Stir to coat in butter. Cook, stirring often, until tender, 2-4 minutes.â…“ cup salted butter, 1 teaspoon garlic, 1 small yellow onion, 2 cups mushrooms
- Stir in the flour and chicken bouillion, and use a wooden spoon to coat/combine.â…“ cup flour, 2 teaspoons chicken bouillon powder
- Gradually stir in the broth and bring to a boil.14.5 ounces low sodium chicken broth

- Remove from the heat and stir in the shredded mozzarella and slivered almonds.1 cup shredded mozzarella cheese, â…“ cup slivered almonds
- Transfer to a 2½ quart baking dish sprayed with nonstick spray.

How to Make Chicken Wild Rice Casserole Step by Step
Sauté the mushrooms: Heat 1/3 cup salted butter over medium-high heat. Add 1 tsp garlic, 1 chopped small yellow onion and 2 cups mushrooms. Cook, stirring often, until tender.
Thicken the mixture: Stir in 1/3 cup flour and 2 tsp chicken bouillon. Use a wooden spoon to stir to combine.
Make it creamy: Stir in 14.5 oz chicken broth and bring to a boil. Boil for 2 minutes and stir often.
Add chicken and rice: Stir in 1 cup half and half, 4 cups cooked chicken and 4 cups cooked wild rice. Cook until warmed through.
Transfer to baking dish: Remove the pot from the heat and mix in 1 cup shredded mozzarella and 1/3 cup slivered almonds. Spread everything into a prepared baking dish.
Add the topping and bake: Stir together 1 bag croutons (mostly crushed) and 2 tbsp melted butter. Spread this mixture all over the casserole. Bake at 350°F for 20-25 minutes.
