Arroz con Pollo is an easy one pot dinner that will satisfy the whole family!

ingredients:

Spices

Chicken Thighs

Onion

Olive Oil

Garlic

Peppers

White Rice

Chicken Broth

Tomato Paste

Green Peas

Season chicken thighs with the homemade spice blend.

Brown the chicken thighs in a skillet and set aside.

Saute onion, bell pepper, and garlic. Stir in the white rice.

Stir in chicken broth and tomato paste. Add the chicken back to the skillet. Cover and simmer.
