Arroz con Pollo Recipe
Arroz con Pollo is an easy one pot dinner that will satisfy the whole family!
Season chicken thighs with the homemade spice blend.
Brown the chicken thighs in a skillet and set aside.
Saute onion, bell pepper, and garlic. Stir in the white rice.
Stir in chicken broth and tomato paste. Add the chicken back to the skillet. Cover and simmer.
Once rice is cooked, toss in frozen peas and cover once more until cooked. Serve and enjoy this one pot meal!
