How To Make Sheet Pan Balsamic Chicken

Prep – Pre heat the oven. Place an empty sheet pan in the oven to heat up.
Make – Rub oil, salt and pepper into the chicken thighs and place in the hot sheet pan. Roast for 10 minutes.
Combine – Add the balsamic vinegar and sugar to a pot. Simmer until it thickens. Mix the beets, sweet potato and onion with the seasonings and oil.
Cook – Remove the chicken from the oven, flip and brush with the balsamic reduction. Place the veggies in the sheet pan and roast. Toss half way through.


Is this a full meal?
The beauty of this sheet pan balsamic chicken is that this is a complete meal. You have protein and veggies and there is nothing else you need to add. It’s wonderfully flavored and the balsamic reduction works so well with the beets and sweet potatoes.
What’s the best chicken to use?
I use skin on, bone in chicken thighs for this recipe. The skin and the bone help to keep the meat wonderfully juicy. If you are in a pinch, you can use chicken breast, but they will require less cooking time, so add them to the pan the same time you add the veggies.


Can you make it ahead of time?
This sheet pan balsamic chicken is best made and served as soon as it is cooked. You can Peel and chop the sweet potatoes up ahead of time and keep them covered in the fridge.
If you do have leftovers, store them in an airtight container and reheat them in the oven until cooked through.

Sheet Pan Balsamic Chicken with Beets and Sweet Potatoes
Ingredients
- 6 boneless, skinless chicken thighs 1.25-1.5 pound package
- 3 tbsp. olive oil divided
- salt and pepper
- 1/2 cup balsamic vinegar
- 1/2 cup white sugar
- 2 cans Aunt Nellie's Baby Whole Pickled Beets fully drained and rinsed
- 2 large sweet potatoes diced into 1” cubes
- 1 onion sliced
- 1 tbsp. paprika
- 1 tsp garlic powder
- 1/2 tsp course sea salt
Instructions
- Preheat oven to 400F. While oven is preheating, place empty sheet pan in the oven so it will be hot.
- Use 1 tablespoon olive oil to rub into both sides of each chicken thigh. Season both sides of each thigh with salt and pepper.
- Heat a small saucepan over medium high heat. Add balsamic vinegar and sugar and stir to combine. Bring to a boil and then reduce to a simmer. Simmer until thickened, where it will coat the back of a spoon, about 10 minutes. Remove from the heat and set aside.
- Remove the empty sheet pan from the oven and spray with nonstick spray. Place the chicken thighs on the sheet pan, top side down. Roast for 5 minutes.
- While chicken roasts and balsamic vinegar is cooking, prepare the veggies.
- Combine beets, sweet potato, and onion in a large bowl. In another small bowl stir together the paprika, garlic powder, and sea salt.
- Toss the veggies in the remaining 2 tablespoons olive oil and then toss in the seasoning mix. Stir to fully coat.
- Remove chicken from the oven and flip so the top side is up. Brush each chicken breast with balsamic reduction. (If the balsamic reduction has firmed up too much, simply put back on the heat until its able to be stirred/brushed.)
- Place the veggies around the chicken on the sheet pan.
- Return to the oven for 15 minutes. Remove from the oven and again brush the chicken with the balsamic reduction. Return to the oven for an additional 15 minutes or until sweet potatoes are tender and chicken reaches an internal temperature of 165F.
- Serve and enjoy!
