Ingredients
- 4 6-inch flour tortillas
- 4 eggs
- ½ cup black beans drained and rinsed
- 1 avocado sliced
- 3 tablespoons extra virgin olive oil
- ¼ cup cheddar cheese
- 2 tablespoons fresh spring onion
- 2 tablespoons fresh cilantro chopped
- 1 cup cherry tomatoes quartered
- ½ onion peeled and diced
- 1 tablespoon white vinegar
- pinch salt
- Juice of 1 lime
- ¼ cup fresh cilantro chopped
- ½ jalapeno pepper chopped
Instructions
- In a saucepan, add cherry tomatoes, onion, jalapeno, white vinegar, lime juice, cilantro, and salt.1 cup cherry tomatoes, ½ onion, 1 tablespoon white vinegar, Juice of 1 lime, ¼ cup fresh cilantro, ½ jalapeno pepper, pinch salt
- Cook on medium-low heat for 5-10 minutes (depending on how cooked you like your sauce).
- In a separate large non-stick pan, add extra virgin olive oil.3 tablespoons extra virgin olive oil
- Crack eggs and fry sunny side up for 5 minutes.4 eggs
- Meanwhile, in a non-stick pan, warm the tortillas for 2 minutes on each side, until edges begin to brown.
To Assemble:
- Lay tortillas flat.4 6-inch flour tortillas
- Add 1 fried egg on top of each tortilla.
- Add 1 tbsp of black beans to each tortilla.½ cup black beans
- Add 1 tbsp of sauce to each tortilla.

How to Make Huevos Rancheros Step by Step
Make the salsa: Add 1 cup quartered cherry tomatoes, 1/2 chopped onion, 1/2 chopped jalapeño pepper, 1 tbsp white vinegar, the juice of 1 lime, 1/4 cup fresh cilantro and a pinch of salt to a skillet.
Cook the eggs: Crack 4 eggs into a pan and fry sunny side up for about 5 minutes.
Warm the tortillas: Warm 4 6-inch tortillas in a pan for about 2 minutes per side to brown.
Assemble them: Lay the tortillas flat. Add 1 fried egg, 1 tbsp black beans, 1 tbsp salsa, sliced avocado, lime juice, and any other desired toppings to the huevos rancheros.
