This healthy chicken soup with kale is a soul warming dish. It’s easy to make with just a handful of ingredients and full of fresh vegetables and herbs. Perfect for cooler weather and low calorie.

Chicken soup has to be one of favorite comfort food that’s just so good when the weather starts to cool. My version is full of healthy veggies and made with a tomato base.
How to Make Healthy Chicken Soup with Kale
- Peel carrots, baby potatoes and onions
- Chop carrots into bite size pieces
- In a large pot add 14 cups water, chicken quarters, tomato sauce, bay leaves, onion, potatoes, carrots and salt
- Bring to boil, then simmer for 1 ½ hours
- Remove kale leaves from stems.
- Chop kale leaves
- Add chopped kale leaves into soup and boil for 10 minutes
- Remove chicken leg quarters from soup, shred them and remove bones
- Add shredded chicken back in the soup
- Squeeze juice of lemon in soup
- Enjoy while still warm!

How long does homemade soup keep?
Whenever I make soup I always make a double batch as it’s so easily stored. Once the soup has cooled you can transfer it to an airtight container ad store it in the fridge for three to four days. It also freezes really well for up to 3 months. You then need to simply reheat it on the stove top.

- Chicken leg quarters work really well in this soup, but you could also use chicken thighs.
- Taste the healthy chicken soup and adjust salt to your taste and add pepper if desired.

It’s not the homemade Chicken Soup which I usually make, but it sounds tasty to me. I don’t like potatoes in my soup, so I’ll try using cauliflower, instead. We like our chicken diced instead of shredded, so I’ll do that! I’ll probably add in some thyme, rosemary, basil, & a sprinkle of coarsely ground black pepper. Great comfort dish!
