Place the marinating chicken in either a glass container or a food safe plastic like Tupperware or a ziplock bag and keep it in the refrigerator. Marinating the chicken it will also tenderize it and help keep it succulent when you grill it.

How to Store and Reheat
Store the leftover salsa and chicken in two separate containers. Stored properly, both the salsa and chicken should stay good in the fridge for about 2-3 days. Note that the salsa might not be quite as fresh after the first 24 hours, but it’ll still be tasty!
I recommend reheating grilled chicken in the air fryer or oven for the best consistency.
How to Freeze
Freeze the chicken (without the salsa) for up to 3 months. I recommend letting the grilled chicken breasts defrost in the fridge for a few hours prior to reheating.

Ingredients
Cilantro Lime Grilled Chicken
- 2 pounds boneless skinless chicken breasts
- 2 cups fresh cilantro chopped
- 1 clove garlic
- 2 tablespoons lime juice about 2 limes
- Zest of 1 lime
- ¼ cup olive oil
- ½ teaspoon coriander
- ½ teaspoon salt
Mango Avocado Salsa
- ½ cup mango cubed
- 1 cup avocado cubed
- ½ cup corn canned or cut off a cob
- ½ cup black beans drained
- 1 tablespoon red onion chopped
- 1 tablespoon lime juice
- 2 teaspoons olive oil
- ¼ teaspoon coriander
- ½ teaspoon salt
Instructions
Cilantro Lime Grilled Chicken
- Pat chicken dry and set aside.2 pounds boneless skinless chicken breasts
- In the bowl of your food processor, add the cilantro, garlic, lime juice, lime zest, olive oil, coriander, and salt.2 cups fresh cilantro, 1 clove garlic, 2 tablespoons lime juice, Zest of 1 lime, ¼ cup olive oil, ½ teaspoon coriander, ½ teaspoon salt
- Process on high until all of the cilantro and garlic has been fully processed and the marinade is smooth.
- Place the chicken in a gallon sized plastic bag or a sealable tupperware container, and then pour the cilantro lime marinade over it.
- Marinate the chicken for at least 4 hours, or overnight.
- Take the chicken out about 30 minutes before you are ready to grill it.
- Turn your grill on high.
- When the grill reaches 400°F, put the chicken on and pour the excess marinade over the chicken.
- Close the grill and cook for about 6-8 minutes*.
- Flip the chicken and grill on the other side about 6-8 more minutes*.
- Check the internal temperature of the chicken with a thermometer, the chicken is cooked when it reads 165°F.
- When chicken is cooked, remove from the grill and put it on a clean plate.
- Let rest about 5 minutes.
- Serve over cilantro lime rice and top with mango avocado salsa.
Mango Avocado Salsa
- Add the mango, avocado, corn, black beans, and red onion to a medium sized bowl, mix with a spoon.½ cup mango, 1 cup avocado, ½ cup corn, ½ cup black beans, 1 tablespoon red onion
- Add the lime juice, olive oil, and spices, toss to evenly coat.1 tablespoon lime juice, 2 teaspoons olive oil, ¼ teaspoon coriander, ½ teaspoon salt
- Serve on top of chicken.

How to make Cilantro Lime Chicken Breast with Mango Avocado Salsa Step by Step
Marinate the chicken: Make the marinade by blending together these ingredients in a food processor until smooth – 2 cup chopped cilantro, 1 clove garlic, 2 tbsp lime juice, zest of 1 lime, 1/4 cup olive oil, 1/2 tsp coriander, 1/2 tsp salt. Add 2lbs chicken breasts to the bag, toss to coat, and marinate in the fridge for 4 hours or overnight.
Make the salsa: Combine 1/2 cup cubed mango, 1 cup cubed avocado, 1/2 cup corn, 1/2 cup black beans, 1 tbsp red onion, 1 tbsp lime juice, 2 tsp olive oil, 1/4 tsp coriander and 1/2 tsp salt in a bowl.
Grill the chicken: Remove your chicken from the marinade 30 minutes before grilling. Then, turn the grill on high. Once it reaches 400°F, place the chicken on the grill and pour the excess marinade all over it. Close the grill and cook for 6-8 minutes. Flip the chicken and cook for another 6-8 minutes. Let the cooked chicken rest for 5 minutes at room temperature before slicing and serving with salsa.
