Croissants and French toast are two of my favorites breakfast treats. Combine them, and you have a tasty croissant French toast casserole!
This super easy brunch recipe is all kinds of wonderful and it’s so easy to make. It’s perfectly sweet with some tartness from the berries and top it with some creamy yogurt and you have a feast on your hands!

How to make croissant French toast bake

- Heat the frozen berries with the agave.
- Whisk together the eggs, milk, vanilla and salt.
- Toss the croissants in the egg mix.
- Place in a baking dish and top with the berries and mozzarella.
- Bake until golden and crisp.


Can you make it ahead of time?
The French Toast can be prepared a night in advance. After you toss croissants in egg mixture, top with berries and mozzarella. Cover with aluminum foil and store in the refrigerator until next morning when ready to bake.
How long will it keep?
This bake is best served as soon as it’s made so that the top is nice and crispy. Leftovers will keep covered in the fridge for 2 to 3 days and can be reheated in the oven.
Can you use fresh berries?
I used frozen berries in this recipe as I always have some in my freezer. You can totally use fresh if you have those, just stir them into the agave before adding them to the croissants. You can use any berries you like or other fruits like banana or apple.

- I used almond milk in this French toast bake, but you can use dairy milk or other plant based milk like soy, oat or coconut.
- This makes for a delicious brunch, but you could also serve it as a dessert with scoops of ice cream.

Croissant French Toast Casserole Recipe
Ingredients
- 5 croissants cut in half
- 3 eggs
- 1 1/2 cups mixed berries frozen (225 g)
- 1 cup mozzarella cut in cubes
- 1/2 cup almond milk 125 ml
- 3 tablespoons agave syrup or maple syrup or honey
- 1 teaspoon vanilla essence
- pinch of salt
Toppings
- 1/2 cup yogurt
- agave syrup or maple syrup or honey to drizzle
Instructions
- Preheat the oven to 375 F / 190 C and grease a 9 x 5 inch baking dish with butter.
- In a small non-stick pan, cook mixed berries with agave syrup for about 2 minutes.
- In a large mixing bowl, whisk eggs, milk, vanilla essence and salt. Toss croissants pieces in egg mixture and place in the baking dish. Top with berries and mozzarella cubes. Place on a baking tray and bake in the middle of the oven for 20 minutes. Until golden and crisp.
- Serve warm with yoghurt and agave syrup.
