Slow Cooker Chicken Soup
If you are lover of chicken noodle soup (let’s be honest, who isn’t?!), you are going to love my Crockpot version!
This is my go to recipe when I want something hearty, warming and comforting. Because it’s made in the slow cooker, it’s so effortless. You can set it earlier in the day and it’ll be ready and waiting for you.

How to make Crockpot chicken noodle soup

- Add the chicken to the slow cooker and season.
- Place in the veggies and sprinkle over the herbs.
- Pour over the broth.
- Cook.
- Once cooked, remove the chicken and shed it.
- Whist shredding, stir in the noodles to the soup.
- Add the shredded chicken back in and serve.
Can you make it with chicken thighs?
I prefer to make chicken noodle soup with chicken breast as I find it shreds much more easily. If you have chicken thighs that you need to use up though, you of course can use those instead. The recipe stays the same.
Can you make it ahead of time?
Once you have made your Crockpot chicken noodle soup, you can keep it warm in the slow cooker for up to 2 hours before serving. The soup will keep well in the ridge for up to 4 days, though you might want to stir in a little extra stock or water as the noodles will absorb a lot of the liquid.
Alternatively, if you are planning to make this ahead of time, or for the freezer, make up the whole recipe, but don’t add in the noodles until you reheat it to serve.
What are the best noodles to use?
I like to use wide egg noodles for this soup. They are nice and substantial and I love the flavor of them. You can make this soup with pasta as well, if you do, it’s best to use fresh so that they cook quickly.
Recipe Tips and Notes
- Feel free to add in other veggies if you like. Peas or bell peppers make a great addition.
- When you add the noodles, don’t stir them too much or they can get soft and mushy.
- If making this ahead of time, wait til serving to add in the noodles so that they stay in tact.

Crockpot Chicken Noodle Soup Recipe

Ingredients
- 4 boneless skinless chicken breasts
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- ¼ teaspoon poultry seasoning
- 1 large yellow onion diced
- 5 medium carrots peeled and sliced
- 4 celery stalks sliced
- 3 teaspoons minced garlic
- 1 tablespoon dried parsley
- 1½ teaspoon dried thyme
- 1 teaspoon dried basil
- 8 cups chicken broth
- 2 bay leaves
- 12 ounces wide egg noodles 1 package
- Fresh parsley
Instructions
- Add chicken to slow cooker; then season with salt, pepper, and poultry seasoning.4 boneless skinless chicken breasts, 1 teaspoon sea salt, ½ teaspoon ground black pepper, ¼ teaspoon poultry seasoning
- Add onion, carrots, celery, and minced garlic on top.1 large yellow onion, 5 medium carrots, 4 celery stalks, 3 teaspoons minced garlic
- Sprinkle parsley, thyme, bay leaves, and basil over vegetables.1 tablespoon dried parsley, 1½ teaspoon dried thyme, 1 teaspoon dried basil, 2 bay leaves
- Pour chicken broth over chicken and vegetables.8 cups chicken broth
- Place lid and set slow cooker on LOW for 8 hours; or on HIGH for 4 hours.
- When chicken is cooked, remove the bay leaves and discard. Then remove the chicken from slow cooker to shred.
- While shredding the chicken, add noodles to the slow cooker. The noodles will be done in about 6 minutes. Avoid over-stirring so your noodles don’t end up mushy.12 ounces wide egg noodles
- Place shredded chicken back into the Crockpot, and mix everything together.
- Serve immediately with fresh parsley on top.Fresh parsley
