How to make Chicken Foldover Quesadillas

- Mix together the ingredients for the sauce.
- Cut a tortilla from it’s edge to the center.
- Place each filling in each quarter of the tortilla.
- Fold the tortilla into quarters over each filling.
- Cook the wrap on each side in a hot skillet until browned.


What’s the best cheese to use?
The cheese in these chicken foldover quesadillas acts like the glue to hold everything together. You can use whatever cheese you like, but choose a good melting one.
Mozzarella or cheddar works well, or you can use a blend like Tex Mex or Mexican. Use more if you like – everything is better with cheese!
Can you make them ahead of time?
These foldover tortillas are best made, cooked and enjoyed right away. If you make them too far ahead of cooking them, the tortilla can become soggy. The sauce can be made a few days ahead of time and be kept covered in the fridge.
If you do have leftovers, you can keep them covered in the fridge for up to 3 days and they can be reheated on the stovetop or in a toaster oven until the cheese has melted.
Recipe Tips and Notes
- Feel free to use store bought salsa in place of the homemade sauce if you’re short on time.
- If your chicken is not seasoned much, feel free to make either more of the spice mix or use taco seasoning to season the chicken a bit. You could also double the amount of sauce and put some extra.
- Fold the wrap in half and in half again, open and you will see little marks that you can use for help to know where to put the ingredients
- Place the salad left of the cut, so it will be in the middle later and doesn’t get too warm/mushy. Cheese right from the cut so it will be on the outside later and melt perfectly.
- If you used oil it would be harder to handle the tortilla and it might brown to fast on the outside before the cheese had a chance to melt.

Chicken Foldover Quesadillas (Tik Tok Viral Recipe)
Ingredients
- 4 soft tortilla wraps
- 1.5 cups grated mozzarella cheese note 1
- 1 cup pulled chicken note 2
- ½ cup kidney beans drained
- ½ cup corn drained
- 1 avocado sliced
- 4-8 lettuce leaves
For the sauce
- ½ cup tomato puree
- 1 teaspoon paprika powder
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoons dried oregano
- ½ teaspoon cayenne pepper
- ¼ teaspoon ground coriander
Instructions
- Mix the spices for the sauce with the tomato puree and add salt to taste.
- Place one tortilla on a board and cut it to the middle (note 3).
- Place the filling for the wrap in each quarter: lettuce and avocado on one, chicken on the next, beans and corn on the third and sauce and cheese on the last. I like to sprinkle some cheese also on the chicken and the beans (note 4).
- Fold the piece left from the cut over, then to the right and then downwards
- Heat up a pan over medium heat – no oil – and cook the wrap 2-3 minutes per side. Turning them over the open side to the top. Press down with a lid for a more even browning (note 5).
- Serve hot with sour cream, salsa or guacamole.
Notes
